Cinco de Mayo is an important milestone in Mexican history and here in the States, we are more than happy to join in the revelry. May 5th 1862 commemorates the Battle of Puebla when the small Mexican village overwhelmed a formidable French army. Though Mexico’s independence did not come until years later, the day still holds significant symbolism for the people of Mexico and the communities in the U.S.
Years ago, my family spent quite a bit of time traveling throughout Mexico, I remember visiting Puebla, and tasting my first Mole Poblano; a rich sauce made from dried chilies, chocolate and hints of cinnamon. I later discovered that Puebla is the motherland of mole. I fell in love with the flavors of Mexico and still daydream of walking thru many an open-air market, crammed with colorful displays of local fruits and vegetables.

The authentic flavors of Mexico are fresh, lively and refined, much different from the Tex-Mex style of cooking we come to think of as “Mexican” food. In honor of our friends south of the border, be adventurous! Reach beyond the burritos and taco salads and try one of these Mexican inspired dishes.
