Eating well and K-Balanced doesn’t have to break the bank. In general, vegetarian proteins are half the price per pound as chicken or beef and everyone can benefit from adding heart healthy plant-based proteins to their weekly diet.
And now, going vegetarian is easier than ever; grocery stores are brimming with heaps of colorful vegetables and tasty faux meat products

I know, you’ve tried tofu and vegetarian “meats” before and you’re a little skittish. Well…try again! We road tested the following recipes with Veg-heads and carnivores alike and got stellar reviews. They are packed with high intensity, global flavors like ginger and chilies, sesame and citrus…the perfect foil to mild (ok, bland) tofu.

Veggie Tacos: creamy avocado, spicy veggie ground beef and crisp, cool lettuce.

Tofu Lettuce Wraps:super simple, with big fresh flavors.

Open-Faced Vegetarian Sloppy Joe: you’ll wonder why you ever ate that stuff out of a can…

Tofu Stacks with Spicy Carrot Salad: who knew tofu could be so fancy!

Buon Appetito!

I tried the Tofu lettuce Wraps and Open-faced Vegetarian Sloppy Joe this week. Delicious! Though I do recommend that you don't eat only soy all-day for your protein source if you're not used to it :-)

Thanks Hollyce. I am not usually one to do the tofu thing, but I am looking for some new flavors and the Tofu stacks sound like just what I might need. I'll let you know how they turned out!
