i can already tell lunch is gonna be the hardest meal for me. on Mondays im in school (im a college student) from 1000-1800 and i dont have a lunch break! I get 10 minutes in between classes and i have 20 minutes in between my last two classes (this was the only way to fit it all into my schedule). Tuesdays im in class from 0830-1330, and then Wed from 1000-1530 and Fri wont be so bad cause im out at noon. (no class thursday but i do open at starbucks that day).

Im also having a hard time finding enough vegetarian recipies that i like. Im really not a fan of cottage cheese and that seems to be in everything! I did make the make and cheese with it though and it turned out ok. Not my fave but its decent. Plus it made enough that i now have dinner for the next few days.

Waiting for my grocery store to stock back up after our big snow storm. Though apparently were supposed to get 10-20 inches in the next few days so that might make my week 1 a little rocky. I'm all good for having a k-balanced breakfast and i have enough mac and cheese to last me the rest of the school week (lol).

About to head to the gym for my first weight training session so we shall see how that goes...

edit: my arms are a lil sore but not in a bad way... i did notice though when i went to take my hoodie off after my workout my arms didn't want to lift up... overall i think this is a strength program i can actually stick with! its not rediculouse but it still challenges me a little bit as well... plus i can already "feel the burn" hehe...

Sounds like you're off to a great start! Way to go.
I'm not a big fan of cottage cheese either, but I find when it's blended, I don't mind it! The Breakfast Smoothie is one of my favorites.
For snacks on the go, I highly recommend picking up some turtle bars. Best of luck!

As for lunches...did you see the Egg Salad Wrap? The Tofu and Rice Salad would also make an easy portable lunch.
