It seems that everyday brings a fresh crop of media taunts about the way we eat in America and how we need to change it. Eat more, eat less, buy local, buy organic, cook at home, grass-fed, not fed… I’m
in the food profession and I find it overwhelming! But there is one thing we
can say our mothers were right about-we need to eat more vegetables.
There’s been a lot of talk on the
Kinetix boards about vegetables; which ones to eat and what to do with them so I thought I’d try to put the final stake in the ground here.
KO vegetables; high in fiber, low in carbohydrates and calories. Things like asparagus, green beans, lettuces, zucchini, peppers, onions. They are easy to find on our website, just do a recipe search for Vegetables/K0 and over 60 vegetables and ideas on how to cook them will magically appear! You can add K0’s items to any meal at any time.
Here’s a few suggestions to make even a kid choke down asparagus.
• Don’t forget to use salt! And if you are trying to reduce your salt intake, then use a dash of lemon or lime juice instead.
• Roasting and Grilling-nothing makes vegetables sweeter and tastier than a deep caramelized glaze from natural sugars;
grilled radicchio and romaine, herb roasted cherry tomatoes,
saffron roasted cauliflower
• Mustard vinaigrettes; mustard, minced garlic, some chopped herbs and your choice of vinegars is all a well-dressed vegetable needs;

• Don’t overcook-anything, ever. Overcooking is the reason you don’t like broccoli to this day.
There are many facets to the KO vegetable; it’s a freebie, it can help keep you full in between your meal and snack, it adds flavor, fiber and fun to any balanced recipe. And with a few tricks to gild the lily, you might find yourself eating more. Suddenly, eating between 2 and 6 cups of raw or cooked vegetables a day won’t seem that crazy. I can see your mom smiling now.
